Broccoli-Apple Slaw

Ah, a New Year. Makes you want to detox, doesn't it? We are in full detox mode over here (I won't tell you how many frosted sugar cookies I ate, or how many glasses of wine I drank in the last two weeks), and it feels good. I am officially obsessed with this salad. I've made it three times this week already, and just bought more ingredients at the store today. It's that good. My husband and I both love it, and my kids will actually eat the broccoli slaw (sans dressing) without crying, so there's that. Even my braces can tolerate this crunch. I'm a happy girl.

Broccoli-Apple Slaw

Salad:
-1 bag (12 oz) broccoli slaw
-1/4 c. thinly sliced red onion
-2 cups julienne cut (aka matchsticks) honeycrisp apples (I've also used pink lady and granny smith with no ill effects)

Dressing:
-1/3 c. canola mayonnaise (I used olive oil mayo)
-2 T apple cider vinegar
-1 1/2 tsp lemon zest--about 1 lemon's worth
-1 1/2 T prepared horseradish
-1 1/2 tsp sugar
-1/4 tsp salt

Whisk dressing ingredients together in large bowl. Add salad ingredients and toss well. Serve immediately, or wait. I had some leftovers sit overnight in the fridge and the salad was just as good for lunch the next day.
