Cauliflower Mash
Cauliflower Mash
- 1 head cauliflower, cut into florets
- 1/4 c. milk, or more if needed
- 1/2 T. olive oil
- pinch salt/pepper
- 2 T. sour cream
- 1/4 t. chipotle chili powder, or about a 1/2-1 t. diced canned chipotle in adobo
Toss cauliflower florets with salt/pepper and olive oil and place on baking sheet. Roast at 425 degrees for about 20 minutes (turn at least once), or until tender and browned. Cool slightly. Food process the roasted cauliflower, sour cream, milk, chipotle powder, and salt/pepper until desired consistency (ours was pretty smooth). If you don't like the chipotle flavor, leave it out. It will be great as-is. You could also add some Parmesan or sharp cheddar, maybe even feta or goat cheese. This is a really customizable way to get some cauliflower into your diet. If you don't like cauliflower (I used to hate it), roast it. You will fall in love.
