Sweet Potato Fries

I almost forgot to post about these. They are darn-near restaurant quality without being fried. That's code for 'they are good-for-you'. Plus, the spice rub contains smoked paprika. If a recipe lists smoked paprika in the ingredients, you just don't ask any questions and make it immediately. Smoked paprika makes everything it is added to taste fabulous.


Oven Roasted Sweet Potato Fries

  • 2 medium sweet potatoes. You can peel, but you don't have to
  • 2 T olive or vegetable oil of your choice
  • 2 t. smoked paprika
  • 1 t. coarse salt
  • 1 t garlic powder
  • 1/2 t. black pepper
  • 1/2 t. cumin
  • 1/8 t. cayenne
  1. Preheat the oven to 425 degrees.
  2. Cut the potatoes into 1/4″ thin strips, or to your desired thickness and length. Mix all other ingredients together in a large bowl and toss with the potatoes until they are evenly coated. Transfer the potatoes to a large baking sheet covered with parchment paper. Spread the potatoes in a single layer. This is important. You don't want them touching or crowded, or they will steam. I used two baking sheets for my fries and I'm glad I did. Place in the oven and cook for 25-30 minutes, turning the fries once or twice during that time to cook evenly. Mine took almost 40 minutes, because I like them crispy. Make sure you watch them closely, because sweet potatoes can go from lovely to charred in a matter of about a minute. You'll be sad if you end up with charred sweet potatoes.  Sprinkle additional coarse salt on top when they are hot out of the oven.
