Malia's Lunch Special
As I was eating my go-to lunch of late yesterday I realize I need to share this. It's fast, filling, and healthy and I always have these ingredients on hand (which is probably why I came up with this concoction). It's a combination of flavors/textures I've come to love and crave.
Malia's Lunch Special
- salad greens of your choice
- sliced almonds
- dried cherries
- avocado
- salt/pepper (I use my California Seasoned Pepper from Penzeys because I adore it)
- good olive oil
- good balsamic vinegar
Toss your greens, nuts, cherries, avocado together in a bowl, drizzle with a bit of olive oil and balsamic, salt and pepper and toss well. The amount of each ingredient you use is up to you. Also, feel free to change up your nuts or dried fruit combos. If I have some feta in the fridge I also sometimes throw that in. Good quality oil/vinegars make a huge difference here. If you live in Rochester, you really should pick up some from Stillwater Olive Oil company (they are strangely enough now located in the luggage/leather store on 3rd street, close to the Tap House for an important reference). The traditional balsamic is fabulous, as are all the oils...flavored or not. They are worth the investment; the quality is outstanding.
