Coconut Bread
I had a friend email me over the weekend to ask for this recipe I gave her about 10 years ago. As I typed it out I realized it belongs on this here blog. Growing up, my mom used to make tons of various quick bread to give as gifts in little loafs wrapped neatly in plastic and tied with her signature perfectly curled ribbon. Often it was poppyseed or zucchini. This went on a little tray with an assortment of her other holiday confections (and there were tons of holiday confections at our house. I considered selling her glass candy at school it was so popular among my friends). If you want to knock somebody's socks off (assuming they love coconut), then give this coconut version a try. A friend shared this recipe with her during my college years, and she passed it onto me. It is awesome and a cinch to make. It's fantastic smeared with cream cheese, butter, or best yet...Nutella. Oh yeah.
Coconut Bread
-1 stick unsalted butter, softened
-1 c. sugar
-2 eggs
-1 t. coconut extract
-2 c. flour
-2 t. baking powder
-1/2 t. salt
-3/4 c. milk
-1 1/4 c. flaked coconut
Mix all together. Bake 1 hr @ 350 degrees in a well-greased bread pan.
