Greek Pizza with Tzatziki Sauce

Greek salad on a pizza? Sign me up. This was yummy....

Greek Pizza with Tzatziki Sauce

Tzatziki Sauce: 

-2 cups plain Greek yogurt
-1 cup diced cucumber
-2 tablespoons fresh lemon juice (from a real lemon)
-2 garlic cloves, minced
-2 tablespoons finely chopped fresh dill
-Salt and pepper, to taste

 In a medium bowl, combine Greek yogurt, cucumber, lemon juice, garlic, and dill. Stir until well combined. Chill for a bit, if possible, before serving. You won't need all this on the pizza. Use the rest as a dip for veggies, pita chips, or better yet--potato chips.

Pizza:
-dough of your choice (I used my usual dough, but even a large Boboli crust would work in a pinch)
-2 Tablespoons Olive Oil
-1 cup Shredded Mozzarella Cheese
-½ whole Red Onion, Thinly Sliced (I used a bit less)
-½ teaspoons Kosher Salt
-¼ teaspoons Freshly Ground Black Pepper
-1 cup Quartered Cherry or grape Tomatoes
-1/2 cucumber, peeled, seeded, and diced
-½ cups Pitted Kalamata Olives, Sliced
-½ cups Crumbled Feta Cheese

Roll out pizza dough and brush with olive oil. Sprinkle with salt/pepper and top with red onion and mozzarella, and bake at 450 degrees for 10-15 minutes, or until done to your liking. Remove from oven and top with olives, cucumber, tomatoes, and feta. Drizzle with Tzatziki sauce, slice, and serve.
