Asparagus and Tomato Salad
my creation, using what I found in my mom's kitchen
-1/2 bunch asparagus, ends trimmed and cut into thirds
-2 large tomatoes, chopped (they need to be awesome ripe seasonal tomatoes...Iowa was just brimming with them. Come on, MN, get with the program!!)
-1 cup mini fresh mozzarella balls (or just dice up most of a large fresh mozzarella ball)
-1 T balsamic vinegar
-2 T olive oil
-salt and pepper
-fresh basil (I probably used about 1/2 cup)
Saute the asparagus for about 3 minutes in a skillet with a bit of olive oil, or just until crisp-tender. Season well with salt and pepper and put into a bowl to cool slightly. Chop tomatoes and add to the cooled asparagus. Stir in basil and oil and vinegar. Stir well, season with salt and pepper and then fold in the mozzarella.
