Banana Oat Chia Pancakes

Happy Snow Day! It's not officially snowing yet, but the anticipation in my house is palpable. We are hunkered down and ready to enjoy the best of the long winter season...and probably manage a million sibling squabbles along the way. I decided to make some pancakes for my little snow bunnies today and couldn't resist trying these from The Chubby Vegetarian. My-oh-my. Texture=amazing. They are nutty, hearty, and full of healthy ingredients. High in protein and fiber, I told my girls to enjoy as many as their hearts desired. These are a big breakfast win. 

Banana, Oat, and Chia Pancakes

-2 cups rolled oats

-4 large eggs

-2 ripe bananas

-2 tablespoon chia seeds

-2 teaspoons baking powder

-2 teaspoon vanilla extract

-2 tablespoons coconut oil (plus more for cooking)

-1/2 cup milk (almond, soy, or dairy...no matter here. I used almond.)

-1 teaspoon salt


I doubled the recipe and am giving you doubled proportions below. Freeze leftovers and pop in the toaster for happy mornings to come. 


Grind the oats into a fine flour with your food processor. Add all other ingredients and pulse until well blended. You will still see the chia seeds, so don't panic. Those don't grind up well, but will cook nicely into the pancakes and no picky eater is going to try to pick them out. Heat some coconut oil in a large skillet and drop batter into desired sized pancakes (I like 1/4 cup portions). Heat for 3-4 minutes or until slightly set/bubbly. Flip and finish about 2-3 more minutes. Serve with butter, syrup, berries, whatever you like. I actually just drizzled mine with a bit of honey and a sprinkle of cinnamon. Divine!
