Crockpot Salsa Verde Chicken
I've got an uber fast, uber yummy way to prep some chicken that will give you extra for the freezer, and that you can use a variety of ways. Interested? You should be. And the bonus is that it doesn't taste like it came from the crockpot. Wahoo!
Salsa Verde Chicken

-3 lbs boneless skinless chicken breasts
-16 oz salsa verde (I like Frontera Tomatillo Salsa)
-2 t. cumin
-1 bottle of light beer or 1 cup chicken broth
Place the chicken in the crockpot, sprinkle with cumin (and some salt/pepper), pour salsa verde and beer (or broth) on top. Cover and cook on low for 7-8 hrs or on high for 3-4, until chicken shreds easily with a fork. Use it for tacos, burritos, soups, casseroles, whatever. I decided to use it to make a healthier Chipotle-esque salad. Here's how we built 'em....
1 cup romaine
1/2 cup cooked brown rice
1/4 cup refried black beans
1/2 diced avocado
handful diced cherry tomatoes
