Dark Chocolate Chia Pudding
Dark Chocolate Coconut Chia Pudding

If you don't like dark chocolate...well, I'm sorry for you. I suppose you could sub milk chocolate if you dare, but I cannot endorse it.
- 1 can full fat coconut milk
- 2 oz of your favorite dark chocolate, chopped. The darker the better (ie "healthier")
- 1 tablespoon good quality unsweetened cocoa powder
- 5 tablespoons chia seeds
- 2 teaspoons vanilla extract
In a saucepan over medium heat, combine the coconut milk, chopped dark chocolate and cocoa powder. Warm the milk until the chocolate is completely melted. Turn off the heat and stir in the chia seeds and vanilla extract. Whisk continuously as you do this so the chia seeds don't sink and form a big clump at the bottom, and continue to do this until the chia seeds begin to thicken the mixture a bit. Pour into small serving cups and refrigerate for at least an hour until the mixture is very thick. I doubled this and I have 8 small cups of this divine concoction in my fridge. Now, let's just be clear--is this as good as brownies and ice cream? Well, no. I'm no idiot. Is this delightfully rich and satisfying as a dessert when you are trying to walk the straight and narrow? Absolutely. Get your perspective straight.
