Garlic-Yogurt Baked Chicken
This chicken isn't especially lovely or incredibly exciting, but it IS super flavorful and is so moist you can cut it with a fork. For reals. It takes about 2 minutes to throw it in an easy marinade, and then another 30 seconds a few hours later to pop it in the oven. It is delicious on its own (as we ate it on night 1), but also a great addition to make a simple salad a full meal (how we ate it on night 2).
Garlic-Yogurt Baked Chicken

-2 lbs boneless skinless chicken breasts (4-6 breasts)
-1/2 cup plain Greek yogurt
-6 garlic cloves, minced
-1/2 t. dried thyme
-2-3 T. panko breadcrumbs
Mix yogurt, thyme and garlic together and toss with chicken in a large Ziploc bag. Work the chicken around in there so that it all gets coated with the marinade. Toss it in the fridge and let the yogurt work its magic for 4-6 hours. At dinner time, place the chicken breasts in a 9x13 pan or on a baking sheet (shake off excess marinade first), season with salt and pepper, and sprinkle each breast with about 1/2 T. panko bread crumbs. Bake at 375 for 45-50 minutes or until done.
