Loaded Chicken Salad Sandwiches

This chicken salad is full of a whole bunch of delicious stuff, and totally void of mayo. To top it all off (literally), it also gets smeared with a quick guacamole before loading the sandwich up with spinach and slapping it between some fiber-filled multigrain toast. I ate this sandwich in about 30 seconds. Amazeballs. Think pimento cheese plus chicken....mmm hmmm.

Loaded Chicken Salad Sandwiches

  • 2 cups cooked chicken, shredded
  • 1 roasted red pepper (yes, from a jar)
  • ¾ cup sharp cheddar cheese, grated (do this yourself--no preshredded here, please)
  • 1 stalk celery, chopped small
  • 2 green onions, chopped small
  • ½ red or yellow bell pepper, chopped small
  • ½ cup pecans, chopped
  • ½ cup parsley, chopped
  • ¼ cup red onion, chopped small
  • ¾ cup Greek yogurt
  • salt and pepper to taste
  • 2 avocados, mashed
  • juice from one lime
  • baby spinach
  • multigrain bread (enough for the 4 sandwiches you'll get out of this recipe)

 

Combine all ingredients except avocado, lime, spinach, and bread (duh). Mix well. Mash avocado with lime juice and salt/pepper to taste. Toast your bread, smear with guac, top with spinach, and chicken salad to made a most delightful sandwich.
