Magic Mushroom Burger
About 5 years ago, my husband and I went to an annual party that our friends host called "The Burger Battle". We entered the battle and submitted a vegetarian entry that took home the prize for best in the "other" category (not beef). Part of the battle was naming your creation, so this was The Magic Mushroom Burger. We made them over the weekend again, and it had been so long I had forgotten how delicious they are!
Matt and Malia's Magic Mushroom Burger
Burgers:
- 4-6 large portobellos, stems removed, gills scraped and mushrooms wiped clean
- 1/2 cup balsamic vinegar
- 1/4 cup olive oil
- 4 garlic cloves, minced
- sliced provolone cheese
Aioli:
- 2/3 cup light mayo
- zest and juice of 1 lemon
- 1/4 cup chopped fresh parsley
- 2 garlic cloves, minced
- pinch of salt and pepper
To serve:
- Whole wheat buns
- Sliced tomatoes, seasoned with salt and pepper
- Baby greens or spinach
Whisk garlic, olive oil, and balsamic together and marinate mushrooms for at least an hour, and up to 8. Grill for 3-5 minutes per side, adding cheese during the last minute so that it melts nicely. Mix aioli ingredients together (can do a day or two ahead) and spread some aioli on both sides of the bun, top with a mushroom, tomato slice, and greens.
