Mix 1 T. Dijon mustard and 4 T. real maple syrup (please do not use pancake syrup! This is not maple syrup! Yes, I am shouting!) in a small dish. Bake your bacon (it's the only way I make it anymore)--spread the pieces in a single layer on a parchment lined baking sheet, a baking stone (with sides) or on a metal rack inside a jelly roll pan and bake for 10-15 minutes at 400 degrees. The time depends on the thickness of your bacon and how crispy you like it--I buy thick cut uncured bacon and I need it to be crispy, so lots 'o oven time over here. Flip your bacon and continue baking until it's about 2 minutes shy of done. Brush some of the maple Dijon mixture over each slice and return to the oven for 2-4 minutes. You will now eat 3 times as much bacon as you normally do. You're welcome.
