No-Bake Energy Bites

I have seen dozens of versions of  no-bake energy bites, superfood bars, granola bars, etc on Pinterest and throughout blogs in recent months. Actually, the RAC (Rochester Athletic Club if you are not a Rochesterite) has a delicious superfood bar that I crave and buy almost every time I go (which maybe defeats the purpose of working out?). It is loaded with oats, crunchy wholesome things, peanut butter, golden raisins, a few chocolate chips, etc. Anyway, I've been intending to try a version of these no-bake-healthy-things-that-taste-like-dessert-to-me for a long time. Today I happened to see that my friend, Jess, posted a recipe for some she likes. Since I just so happened to have everything on hand, we whipped some up for snack this afternoon. These took a total of 10 minutes to mix, scoop, roll, and store, and my kids devoured them. I stuck half in the fridge and the other half in the freezer. We have three dozen of these little balls of sunshine in our home (minus the few we ate yesterday, of course), and that makes me happy. I've got lots of ideas as to how to switch these up, so I think we will have fun with this recipe for some time to come. I even think a couple of these would make a respectable breakfast, along with a banana and glass of milk. 

No-Bake Energy Bites 
-From moneysavingmom.com and my friend Jess. There are gobs of variations to this recipe, but I am giving to you as I made them on this date.

-2 cups quick oats
-1 cup creamy peanut butter
-2/3 cup honey
-1 cup coconut flakes
-1 cup wheat germ
-1 cup ground flaxseed
-1 cup mini chocolate chips
-2 teaspoons vanilla

Mix all ingredients together. Roll into balls, or do as I did and use a 2 T. cookie scoop. I laid them all out on a parchement-lined cookie sheet (got exactly 36) and stuck them in the fridge for a couple hours. Then I took half and put in a single layer in a freezer container and left the other half in the fridge (I imagine they will be fine for a few days like this, if they even last that long).
You can eat these frozen, or thawed at room temp for 30 minutes, or warmed in microwave for 5-10 seconds.
