Parmesan Crusted Chicken

I've made this chicken twice in the last week--it's fast, tasty, and will go nicely next to any side dishes. We've also been using it in salads. It's a nice, simple way to jazz up some boring roasted chicken.

Parmesan Crusted Chicken

-4 boneless skinless chicken breasts
-1 T olive oil
-salt/pepper
-1/4 cup freshly grated Parmesan
-2 T. mayo (I haven't tried it, but I'd be willing to bet that Greek yogurt would work as a sub)
-1 t. Greek seasoning (my sub) or 1 t. Italian Seasoning (how the recipe was written)

Line a sheet pan with foil, spray with cooking spray. Lay the chicken on the pan, drizzle with the olive oil, and season well with salt and pepper. In a small bowl, mix the parm, mayo, and Greek or Italian seasoning together and rub evenly on the chicken. Bake at 375 for 40-45 min or until done. That's it!
