Peach Frozen Yogurt

OK, last peach recipe. I promise. I was really skeptical about this idea when I read about it on Mel's Kitchen Cafe last week, but wow, it is awesome. You can make an incredibly fresh tasting frozen yogurt (that tastes more like ice cream than yogurt, thankfully) in about 5 minutes with just your food processor. We tried this for 'What's Cookin' Wednesday' this week and my kids were in heaven. We will be experimenting with different fruits and make this all summer long.

  • 4 cups frozen peaches
  • 1/2 cup plain low-fat yogurt (I used 2% Greek. I think you could also use vanilla and cut back on sweetener)
  • 1/4 cup honey or agave (I used honey, and I can taste it because it's a stronger-tasting local honey. I think perhaps it's worth trying a smaller amount if your peaches are really sweet as mine are. Next time I'm going to start with half the amount )
  • 2 t. freshly squeezed lemon juice

Combine all ingredients in a 7 cup or larger food processor and process until smooth and thick. It will take at least 5 minutes and lots of stopping to scrape down bowl/redistribute the ingredients (at least it did for me and my humble food processor). You can serve it right away, but it will be pretty runny. After about an hour in the freezer, it will scoop like a soft ice cream! It can be kept in the freezer for up to a month, but I guarantee you it won't last that long.
