Need a fast dessert? Give this one a try. Another gem I found in that stack of clippings. It comes from Everyday Food, which was one of my very favorite magazines. Reader's Digest in size, it came from Martha Stewart and was full of great, fun, simple meals with a gourmet twist. It was one of my favorite birthday gifts for friends, until they decided to discontinue the print version. Boo hiss. I am NOT an online magazine reader, and certainly did not appreciate them sending me Martha Steward Living in its place without my permission. Sigh.

Rocky Road Bars

  • 8 graham cracker sheets
  • 1 1/2 cups raw almonds, toasted and coarsely chopped
  • 1 cup marshmallow fluff
  • 1 bag chocolate chips-
  • 1 can sweetened condensed milk

Preheat oven to 375 degrees. Line the bottom of a 9x13 pan with the graham crackers. You will need to break some of them to make them fit. Bake until crackers are lightly toasted and fragrant (about 8 minutes). Sprinkle with almonds and dollop evenly with marshmallow topping. Combine chocolate chips and condensed milk in a heatproof bowl set over a pan of simmering water (aka double boiler). Stir constantly until melted. Alternatively, I think it would be fine to microwave in 30 second intervals, stirring well in between until melted and smooth. Pour chocolate mixture over the fluff, and quickly swirl with a knife. Refrigerate until set (an hour or two), then cut into small squares. Put them back in the fridge and keep them there for up to 3 days....if they last that long.
