Balsamic Chicken Thighs
Now that the weather is finally nice-ish around here, I bet you are ready to fire up your grill. I stumbled upon this solid marinade last week and we enjoyed this flavorful chicken. It unfortunately was raining when I made this dish, so I just put the chicken and a bit of the marinade in a 9x13 pan and roasted it at 400 degrees until done (about 45 minutes). Still very delicious. Served with a salad and some parmesan quinoa (fancy way of saying I stirred some parm into the cooked quinoa), and we had ourselves a delicious healthy meal in no time.
Balsamic Chicken

Combine the following in a large ziploc bag:
- 1/2 cup balsamic vinegar
- 1/4 cup olive oil
- 1 shallot, diced
- 1/2 tsp minced garlic
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 tsp Italian seasoning or dried basil
Add 2-3 lbs of chicken (I like boneless, skinless thighs for this purpose) and marinate for at least 2 hours, and up to overnight. Either grill, or roast in the oven.
