Cranberry Walnut Chicken Salad
I am continually eating my words these days. I have spoken the following many, many times in my life: "I don't like chicken salad". And the truth is I usually don't, but every now and then I make a version of it and love it. So, while I don't like chicken salad, I really loved THIS chicken salad. Serve it on greens (as I did for my husband when he got home from a day of travel), in a pita (how I prefer it), or between two slices of toast when neither of the above options are available on a Friday afternoon in your kitchen. It's a keeper.
Cranberry Walnut Chicken Salad

Combine the following:
- 4 cups cubed, cooked chicken (I used 2 lbs boneless skinless breasts that I roasted and shredded
- 1 cup walnuts, toasted and chopped
- 1 cup diced celery
- 2 T finely chopped shallot
- 1 cup dried cranberries
- 2/3 light mayo
- 3 tablespoons white wine vinegar
- 2 tablespoons finely chopped fresh parsley
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
