Quinoa and Black Bean Lettuce Wraps

  • ½ cup chopped red onion
  • 1 red or yellow pepper (washed, seeded, and diced)
  • -½ can black beans (rinsed and drained)
  • 1 cup quinoa (dry and cooked according to package, cool slightly)
  • 1 cup salsa
  • 1 avocado, diced
  • salt/pepper to taste
  • fresh lime juice (NOT the plastic bottle, people!)
  • Bibb lettuce leaves, washed and dried

In a large mixing bowl, combine all ingredients above (except for lettuce leaves). Season to taste with salt/pepper and a squeeze of lime juice. Scoop into lettuce leaves. Serve as appetizer or light lunch. Now, while I thought these were quite delicious, I can't help but think that they need a little jazzing up. Next time I plan to make a sort of cumin-lime-cilantro dressingand use less salsa. You definitely want the lime to brighten the flavors, and the cumin (or maybe some chipotle chili powder) would add a nice smokiness. This also was great leftover for lunch the next day (don't fill leaves until just before serving, however).
