Cauliflower Buffalo "Wings"

- 1 head Cauliflower
- 1 cup Milk
- ¾ cups Flour
- 2 teaspoons Garlic Powder
- 1 Tablespoon Butter
- 2/3 cup Frank's Red Hot Sauce (I did not use nearly all of it and the wings were still REALLY spicy. Go easy!)
- blue cheese or ranch dressing for serving
Trim the heat of cauliflower into appetizer-sized pieces. Set it aside.
In a shallow bowl stir together milk, flour and garlic powder.
Dip each piece of cauliflower into the batter and allow the extra batter to dip off. Place on a greased baking sheet. Spray the tops of the florets with cooking spray. Bake for 15-20 minutes, or until tender and crisp on the outside.
Meanwhile, melt the butter in a saucepan over low heat. Mix together melted butter and Frank’s hot sauce.
Toss cooked cauliflower pieces with sauce (start with just a bit so that you don't over sauce). Serve with a side of dressing. I had a ton of leftover batter so I threw it in the fridge and used it again the next day to make more with minimal effort. If for no other reason, try these as a new way to make and serve a very healthy vegetable that is often so boring. A great way to eat cauliflower!
