Baked Salmon with Garlic and Dijon
-slightly adapted from natashaskitchen.com
-4 salmon steaks or filets (about 1.5 lbs)
-1 dried parsley
-2 garlic cloves, pressed
-1/2 Tbsp Dijon mustard
-1/2 tsp salt
-1/4 tsp black pepper
-2 Tbsp oil of choice--something with a high smoke point, like avocado or canola
-2 Tbsp of fresh lemon juice
Line baking sheet with foil and arrange salmon. Whisk remaining ingredients together and spread/spoon evenly over the fish. Bake at 425 for 15-18 min, or until fish flakes easily with fork. Serve with lemon wedges.
