Sesame Ginger Salmon
Sesame Ginger Salmon
-adapted from Enjoy Cooking The Costco Way
-1/4 c. plus 2 T. dark brown sugar
-1/4 c. sesame oil
-3 T. rice vinegar
-2 T. soy sauce
-1 T. minced fresh ginger
-1 garlic clove
-4 salmon fillets or steaks (6-8 oz each). I used my usual frozen Sockeye salmon fillets from Trader Joe's and just cooked them from frozen
-salt/pepper
-2 T. black sesame seeds (these are optional, but pretty)
In a blender or food processor, combine everything except salmon, sesame seeds, and salt/pepper, and pulse until emulsified. Divide equally between 2 bowls. Brush the contents of one on the salmon and sprinkle with salt/pepper. Roast on a baking sheet at 400 degrees until done (took me about 30 min from frozen. I actually baked the salmon for about 10 minutes plain before putting the first coat of glaze on. This is so the glaze didn't just slide right off the frozen fish). Brush the second bowl of glaze on the salmon (keep them separate from each other, OK? No need to cross contaminate your glaze with raw fish juices) and then sprinkle with sesame seeds. This is ready to serve as-is, but I popped it back in the oven for a few more minutes to set and heat the second coat of glaze. This was delicious, easy fish.
