Beef and Bean Quesadillas
I almost forgot to post this yummy, easy family-friendly meal! I think it's perhaps due to the fact that I didn't take a picture, and the pics on my phone's camera roll always remind me to write a post. You'll get over it, right? Besides, this isn't a pretty meal per se, but it is totally delicious. Give it a try the next time you are tempted to make tacos. It will be a nice little shake-up to your routine.
Beef and Bean Quesadillas

- 1 lb of hamburger
- 1/2 cup refried beans
- 1 can (4oz) diced green chiles
- 1/2 t. dried oregano
- 1/2 t. cumin
- 2 t. chili powder
- 1/2 t. salt
- tortillas
- cheese
- sour cream and salsa for serving
Brown beef and drain any grease. Stir in refried beans, green chiles, cumin, salt, chili powder, and oregano. Simmer for 3-4 minutes. Spread filling onto tortillas, top with cheese, fold in half, and cook in skillet until browned on both sides. Cut into thirds and serve with sour cream and salsa.
