Easy Korean Beef
Like a good Asian-style beef stir fry, but hate the chopping? The answer lies in this recipe I found on Pinterest. It's as fast as making tacos and will leave you with a very delightful and non-traditional ground beef meal. It is slightly sweet, kind of teriyaki like, so a great one for picky kids. My meat eater liked it. I am even happier about this dish because I made it a day ahead of time...because I forgot that we had that work dinner to go to and I didn't need to cook and went ahead and thawed the beef. And we all know I have issues surrounding food safety, so I was "forced" to go ahead and make it. And you know what? It was a smart move, because on jam-making day all I had to do was bake my brown rice, reheat this beef, and quickly saute some baby kale for the side. Bingo.
Easy Korean Beef

2 pounds lean ground beef
1/2 cup brown sugar
1/2 cup soy sauce (I use low-sodium)
2 Tablespoons sesame oil
6 cloves garlic, minced
1 T minced fresh ginger
3/4 t. crushed red pepper (more if you want it spicy)
2 bunches green onions, sliced
Heat a large skillet over medium heat and brown hamburger with garlic in the sesame oil. Drain any fat and add brown sugar, soy sauce, ginger, salt and pepper and red pepper. Simmer for a few minutes to blend the flavors. Stir in green onions and serve over brown rice.
