Cherry Pecan Baked Brie
So I also tried this baked brie recipe as another app when our dear friends came over last night. I couldn't resist the huge wheel of brie for $4.99 at Costco, but I wanted to try something different than my usual go to with brie (rhubarb jam). This is my new go-to. It is heaven on a cracker, kids. The bonus is that it takes a whopping 5 minutes to assemble. Brie will never fail you, I say. Never.
Cherry Pecan Baked Brie

- -1 (8-12 oz) wheel brie cheese, rind trimmed
- -2 tablespoons brown sugar, packed
- For the topping:
- -1/4 cup brown sugar, packed
- -2 tablespoons honey
- -2 tablespoons maple syrup
- -1 tablespoon unsalted butter
- -1/4 teaspoon ground cinnamon
- -Zest of 1 orange
- -1/2 cup chopped pecans
- -1/4 cup dried cherries (or cranberries)
Place brie in a small baking dish after cutting the rind off the top. Sprinkle with brown sugar. Bake at 350 for 12-15 minutes or until softened and oozing. Cool 5 minutes. Meanwhile, heat topping ingredients except pecans and cherries in a small saucepan until boiling. Cook and stir for about 2 minutes or until the topping looks foamy. Remove from heat and stir in dried cherries and pecans. Pour over brie. Serve with crackers or bread.
