Eggroll In A Bowl
I make very few recipes that we decide will be staples in our house. Tonight, we added this to the short list. Fast, simple, healthy, one pot meal. It's just fabulously delicious.
Eggroll In A Bowl

-1 lb ground pork
-1 bag coleslaw mix (shredded cabbage and carrots)
-1/2 c. low sodium soy sauce (if you do not have low sodium soy sauce, then cut this in half. It's plenty salty with the low sodium variety)
-5 cloves garlic, minced
-1 t. ground ginger
-1 bunch green onions, chopped
Brown the pork in a skillet with a little bit of oil until cooked through. Add the coleslaw mix and stir well. Mix the soy sauce, garlic, and ginger in a small bowl. Add to pork mixture and stir well. Cook for about 5 minutes, until cabbage is slightly softened (still a bit crunchy). Stir in green onions. Serve in bowls. Next time, I might serve these up in bibb lettuce leaves a la lettuce wrap.
