Pistachio Artichoke Hummus
It's hard to beat a good hummus. I could (and sometimes do) eat it by the spoonful, and I am always up for trying a new hummus recipe. The flavors of this one are very unique, and produce a rich-tasting nutty hummus that is great with pita chips, tortilla chips, or veggies. It would make a great base for a sandwich (then piled with avocado, cucumbers, tomato, etc...), and that's what I'll try next time I make it. It's a fast, impressive-sounding snack. The grown-ups at my house enjoyed it pre-dinner tonight.
Pistachio Artichoke Hummus

-1 can garbanzo beans, drained and rinsed
-1 jar marinated artichokes (do not drain the marinade)
-1/2 tsp pepper
-1/2 tsp kosher salt
-1/2 cup pistachios (they sell these out of the shell now, if you didn't know. I would never have made this otherwise)
-1/3 cup grated parmesan
-juice of one lemon
Pulverize the pistachios in a food processor, then add remaining ingredients and process until smooth. Serve topped with a few more pistachios, a sprinkling of parmesan, and a drizzle of good olive oil. Easy peasy!
