Leftover Turkey Melt
I have loads of recipes to post, including everything I made for Thanksgiving, but it will take some time. Before you use up all your leftover turkey, I had to quickly post this sandwich I came up with tonight. It was super fast, totally delicious, and I think my favorite use of leftover turkey to date.
Leftover Turkey Melt
- 2 slices sturdy bread (I used sourdough straight from the freezer. I know you are not surprised.)
- shredded pepper jack cheese
- leftover sliced or shredded turkey
- cranberry sauce (I made this 2 ways--one with homemade sauce for me, and one with that canned jellied crap for my husband. He actually prefers that to homemade. He is weird, but I love him anyway.)
Butter one side of each piece of bread. In a nonstick skillet, layer bread, cheese, turkey, a bit more cheese, and then generously spread some cranberry sauce on the second slice of bread. Cook as you would a grilled cheese, until toasted with oozing cheese. Total heaven. If you are a vegetarian, I think this would be just as yummy without the turkey. Seriously. The combo of spicy, creamy cheese and tart/sweet cranberry sauce is quite divine. Late night Black Friday snack, anyone?
