I cannot wait for breakfast tomorrow. This was that good. Just to be clear, you eat this cold from the fridge. This is an awesome sensory experience for us texture-loving people. I sprinkled some cinnamon atop mine this morning and also think that a touch of sliced almonds (or coconut!) would put this over the top. I can't wait to try different combinations of fruit (strawberries, peaches, blackberries perhaps?) and sweeteners (vanilla or honey?). This is going to be my breakfast routine (alongside my beloved kale smoothie of course) for a long time to come. This works perfectly in small 1 cup containers with lids. I used some of my Ball jam jars and containers, but any smallish Tupperware or glass container will be just fine. 

 

  • 1/3 cup milk (dairy or otherwise)
  • 1/4 cup rolled oats
  • 1/4 cup plain Greek yogurt
  • 1-2 t. real maple syrup (I used 2 t. in this first batch, but don't think you need that much. I'm trying 1 t. the next time)
  • 1 1/2 t. chia seeds
  • 1/4 cup blueberries

For one serving--place milk, oats, yogurt, maple syrup, and chia seeds in a 1 cup container with lid and shake well. Remove lid, stir in berries. Refrigerate overnight (or up to 2 days) and enjoy in the morning straight from the fridge (stir a bit first).
