Perfect Avocado Toast
I thought I had a pretty good handle on avocado toast, so when I saw a recent post on Smitten Kitchen I almost ignored it. It's a good thing I didn't. This trumps all other versions of avocado toast I've tried. The best part? It's definitely the simplest and fastest preparation of this glorious trendy food, and I have eaten it every.single.day for nearly two weeks now. Life changer right here.
Perfect Avocado Toast

- 1 piece whole wheat sandwich bread
- 1/2 large avocado
- wedge of lemon
- salt
- good olive oil
- red pepper flakes (may I suggest Penzeys Aleppo pepper?)
Toast your bread until it's really toasty and sturdy. No partially toasted bread allowed here. Really brown it up, but don't burn it of course. Mash the avocado onto the surface of the toast and spread it all the way to the edges, leaving nothing exposed. Sprinkle with salt, squeeze the lemon, drizzle the olive oil, generously cover with red pepper flakes, and cut in half diagonally.
